This chicken dish, sauteed with thick slices of onion, can be easily made into a one-dish meal by adding chunks of carrot and potato into the skillet.
Chicken and Onions
1 very large onion
1/2 c olive oil
4-6 chicken breast halves
salt
pepper
paprika
Peel the onion and slice thickly. Heat the olive oil in a skillet and saute the onion slices on one side until lightly browned; about 5 minutes. Turn the onion slices over and place the chicken pieces on top. Season the chicken with the salt, pepper and paprika to taste. Cover skillet, reduce heat to low and cook slowly for 30 minutes. Turn chicken pieces over so that the onion slices are now on top; add more seasonings. Cover and continue cooking for an additional 30 minutes or until chicken is tender.
