
I had never eaten pesto before this, but am now an avid fan of the fragrant green stuff! In case you didn't know (I didn't and had to ask), pesto mix can be found in the same aisle and right next to all of the dry gravy packets and seasoning blends. The market also sells refrigerated, prepared pesto in the produce section. This is a fabulous dish. One of the very few chicken recipes I own which doesn't require cream-of-something soup.
Chicken Pesto and Cheese
2 packages pesto mix
6 boneless, skinless chicken breasts
1 slightly beaten egg
breadcrumbs
6 slices provolone cheese
4 oz can sliced mushrooms, drained
8 oz spaghetti
Pound chicken to flatten slightly. Dip in egg and then coat each piece in breadcrumbs. Put in greased pan. Bake uncovered at 350 for 40 minutes. While chicken is baking, prepare pesto mixes. Pour 1/2 over chicken; top with cheese and mushrooms. Bake an additional 15 minutes longer.
Cook spaghetti and mix with remaining pesto. Serve chicken on top of spaghetti.
