Spinach Salad

This takes a little more work, than say dumping a bag of prepared salad mix into a bowl, but it is so worth the effort. I skipped making the dressing once and used a bottled variety, but it just wasn't the same.

Spinach Salad
1 bag of spinach leaves
1 small red onion, thinly sliced
3 hard cooked eggs, chopped
1 tomato, sliced into thin wedges
6 slices bacon, crisply cooked and crumbled

Dressing:
1 small onion, chopped
1 c oil
1/3 c. white vinegar
1/3 c sugar
1 T prepared mustard
1 teas celery seed
1/4 teas salt

Combine spinach, onion, eggs, tomato and bacon. Whisk dressing ingredients together and pour over; toss to coat. Serve immediately.
