Cold Tea Gingerbread

My favorite way to eat this is with orange marmalade, but it's also delicious with a thick slathering of butter, whipped cream or ice cream.

Cold Tea Gingerbread

1/2 c. softened butter
1/2 c. sugar
1 egg
1-3/4 c. flour
1 teas. baking soda
1/2 c. cold, strongly brewed tea
1/2 c. molasses

Beat butter and sugar together with an electric mixer until creamy.

Add egg, then flour and baking soda, beating just until blended. Add in the tea and molasses beating just until blended.

Pour into a greased and floured 9X5 loaf pan. Bake at 350 for about 40 minutes.
