Cream Cheese Eggs

I shortcut this by buying the precooked bacon and cutting it into pieces. I'm writing the recipe out as I originally found it, calling for a dozen eggs, which would serve 6. Eggs don't re-heat well and since there is just the two of us here, I cut everything down to fit our appetites (5 eggs, 6 slices of bacon and 4 oz. cream cheese). Really good scrambled egg recipe!

Cream Cheese Eggs

1 lb. bacon, cut into pieces
12 eggs, beaten
salt and pepper, to taste
8 oz. cream cheese, cubed

Cook bacon in skillet over medium heat until done; drain. Turn heat down to low, add eggs, salt, pepper and cream cheese. Cook and stir until cheese is melted and eggs are set. Serves 6.
