Bacon Upside-Down Cake

This is one of this sounds weird, but tastes great recipes. If you really like salty/sweet combinations, then you'll enjoy this. Use the single layer cake mix (9 oz. size), such as Jiffy.

Bacon Upside-Down Cake

12 slices bacon
1/4 c. packed brown sugar
1 (9 oz.) package white cake mix, prepared according to box directions
1/4 c. fresh or frozen blueberries
1 teas. vanilla or maple flavored extract
1/4 c. maple syrup

Preheat oven to 350 degrees. Grease a 9-inch round cake pan.

Place bacon in a large, deep skillet. Cook over medium-high heat, turning occasionally, until lightly browned but still soft, about 7 minutes. Drain bacon slices on a paper towel. Place bacon on bottom of greased cake pan, overlapping slices as necessary to fit. Sprinkle bacon strips with brown sugar.

Combine prepared cake batter, blueberries, vanilla or maple extract and maple syrup in a large bowl, mixing well. Pour batter over brown sugar and bacon in cake pan.

Bake in preheated oven until a toothpick inserted in center comes out clean, 15 to 20 minutes. Cool slightly and remove from pan by inverting onto a serving platter. Cut into wedges to serve. Maple or blueberry syrup may be drizzled over wedges.
