Very easy dessert! If you don't have a panini grill, just lightly fry the pound cake slices on both sides in a pan. Then immediately spread the cake with the filling and arrange strawberries on top; cover with another cake slice. Allow to sit for a minute or so and the filling will warm up.
Chocolate Strawberry Sandwich
1/4 c. Nutella
12 (1/2-inch) thick slices pound cake (from 1 (10.75-ounce) loaf
6 fresh strawberries, hulled and very thinly sliced
Butter-flavored nonstick cooking spray
Heat a panini grill to medium according to the manufacturer's instructions. Spread the chocolate-hazelnut spread over 1 side of all of the pound cake slices. Arrange the sliced strawberries over 6 cake slices. Cover with the remaining cake slices, chocolate side down.
Spray panini grill with nonstick spray and grill each panini until the pound cake is crisp and golden and the fillings are warm, about 2 minutes. Cut each panini in half and serve.

Pimiento Cheese Spread
There is nothing like a pimiento cheese sandwich! This spread tends to suck the moisture right out of bread, so make-up your sandwiches just right before you serve them.
Pimiento Cheese Spread
1 lb. extra-sharp cheddar cheese, grated
1 (7 oz.) jar chopped pimientos
2 T. finely grated onion
salt and pepper, to taste
Dash cayenne pepper
2/3 c. mayonnaise
Blend all ingredients together and mash-up with the back of a fork until desired consistency. Best if refrigerated overnight.

Pizza Sandwiches
A variation of grilled cheese using mozzarella, pepperoni and fresh tomato-all dipped in warm pizza sauce...Yum!
Pizza Sandwiches
8 slices Italian bread
8 slices mozzarella cheese
8 slices tomato
4 teas. grated Parmesan cheese
1/2 teas. garlic salt
24 slices pepperoni
softened butter
pizza sauce, warmed
On 4 slices of bread, layer 1 slice mozzarella, 2 slices of tomato, 1 teaspoon Parmesan cheese, a dash of garlic salt and 6 slices of pepperoni. Top with remaining mozzarella and bread. Spread outside of sandwiches with butter.
On a hot griddle, heat sandwiches for about 3-4 minutes per side until golden brown and cheese is melted. Serve with warm pizza sauce for dipping.

Toasted Bagel Deluxe
This is especially great in the summertime when you can get tomatoes right off the vine. Also a fantastic summer supper when it's just too hot to fire up the oven. Use the big bakery bagels and not the skimpy frozen ones!
Toasted Bagels Deluxe
4 bagels, any flavor
Softened cream cheese
16 slices crisp-fried bacon, drained well
Very ripe sliced tomatoes
Split bagels and toast lightly in toaster.
Spread cream cheese over entire top and bottom surface of bagels. Place four bacon slices on each bagel and top bacon with thick slice of tomato. Place bagel tops on sandwich. Cut bagel in half, if desired . Serve immediately. Makes 4 sandwiches.

Parmesan Chicken
I found this recipe years ago in a magazine on a page advertising Kraft Parmesan cheese. It's been a favorite ever since. Tastes great hot or cold, as a main dish or in a sandwich.
Parmesan Chicken
8 boneless, skinless chicken breasts, pounded thin
1/2 c. melted butter or mayonnaise
1-1/2 c. seasoned breadcrumbs
1-1/2 c. grated Parmesan cheese
salt & pepper, to taste
garlic powder, to taste
Combine the breadcrumbs, Parmesan cheese, salt, pepper and garlic powder in a pie dish; set aside.
Use a pastry brush to coat the chicken with the mayonnaise (if using butter, just dredge them). Next, coat well with the breadcrumb mixture.
Bake at 350 about 35-40 minutes.

Coffee Pot Roast
Found this in an Amish cookbook and ever since, it has been one of my favorites. The coffee adds a deep flavor to the meat, you really have to try it. Slice the roast thinly and serve with the pan juices on the side. Leftovers make terrific sandwiches.
Coffee Pot Roast
3-4 lb beef roast
2 T vegetable oil
1/4 c soy sauce
1 c brewed coffee
2 bay leaves, crumbled
1 garlic clove, minced
1 teas oregano
2 large onions, sliced
Brown the meat on all sides in the oil. Meanwhile, in a roasting pan, combine the soy sauce, coffee, bay leaves, garlic and oregano. Add one of the sliced onions on the bottom of the pan, lay the meat on top and cover with the second sliced onion.
Cover roaster and bake at 300 for about 4 hours (until meat pulls apart easily). Baste often with the pan juices and add more soy sauce and coffee if the liquid begins to boil away.

Spoonburgers
Much better than canned Sloppy Joe mix; make it as hot as you want by increasing the chili powder and adding some red pepper flakes. This is for the crock pot, but you can also make it in a frying pan if you need it in a hurry. Serve on toasted buns or over hot, buttered noodles. Also freezes well if you find yourself with a lot of leftovers.

1 large green pepper, chopped
1 large onion, chopped
16 oz tomato sauce
16 oz stewed tomatoes, undrained
8 oz can chopped green chilies
2 T chili powder
2 teas paprika
salt and pepper to taste
Add all ingredients into a greased crock pot and mix well, breaking up stewed tomatoes with the back of spoon. Cook on high for 4 hours or low for 8 hours.

Tuna Cracker Spread
Even people who don't care very much for tuna like this simple snack. I also use it as a sandwich filling, adding some finely chopped celery and toasted walnuts, then slathering it on thick slices of honey wheat bread.

1 (6 oz) can tuna, drained
8 oz cream cheese, softened
1 T mayonnaise
1 T onion flakes
1/8 teas garlic powder
splash of lemon juice
chopped nuts
parsley flakes
Mix together the tuna, cream cheese, mayonnaise, onion flakes, garlic powder and lemon juice.
Form into a ball (easier if you refrigerate for an hour or so) then roll in chopped nuts and parsley flakes. Serve with thick, hearty crackers.

Italian Shredded Beef
This makes AMAZING sandwiches or you can thicken the juice with a little cornstarch and serve over noodles. The house smells so good while this is cooking with all of the herbs and spices. If you use a 5 lb roast, you will end up with filling for about 24 hamburger bun sized sandwiches, which is OK since this freezes very well. Place individual portions in sandwich bags along with a little of the juice, then place all of those into a gallon size freezer bag. For a super quick meal, just pull out one of the bags, empty into a bowl and microwave on high for 2 minutes. We like ours on toasted buns with provolone cheese and some of the dipping sauce on the side.

1 envelope Good Seasons Italian dressing mix
1 teas each:
salt
pepper
oregano
basil
onion powder
garlic powder
Place roast in crockpot. Mix together water and seasonings and pour over roast. Cook on low for 10-12 hours. Shred meat. Use a slotted spoon to serve on rolls. Serve juice on the side as a dipping sauce, if desired.
